Air seems to be the most practical, as you can find it anywhere.
Fire could work, as firebenders seem to synthesize it out of nothing, although in The Last Airbender, fire needed to be present in order to firebend. Then, there's also lightning-bending.
Waterbending is awesome, as it can bend in the forms of water and ice. There's also bloodbending, a form of waterbending that allows for control over one's body.
Earthbending is the most epic of them. It also has metalbending and sandbending...
